White Chili Recipe Ingredients
- Olive Oil – Can use avocado oil or coconut oil.
- Yellow onion, chopped
- Chicken – We like chicken breast, you may use thighs or skip cooking and use a cooked and shredded rotisserie chicken.
- Garlic, minced
- Chili powder
- Cumin
- Oregano
- Mustard Powder
- Cayenne
- Black Pepper
- Chicken Broth - Use canned or make your own using 6 bouillon cubes and 4 cups water.
- Great Northern Beans – cooked, canned.
- Rotel tomatoes – regular or with green chilies.
- Cream Cheese – reduced fat or regular.
- Sour Cream – reduced fat or regular.

Instructions
Dice onion.
Cube chicken into 1 inch pieces.
In medium stock pot over medium heat, sauté onion and chicken until chicken is no longer pink on the outside. (Chicken will continue to cook in broth)
Increase heat to medium-high. Add garlic, chili powder, cumin, oregano, mustard powder, cayenne, black pepper, and chicken broth to stock pot.
Cook for five minutes. Remove Chicken to plate and shred with two forks. Return chicken to stock pot. Add drained Great Northern beans, and Rotel (with juice).
Reduce heat to a simmer.
In a medium microwavable bowl, microwave cream cheese for one minute, whisk in sour cream, then whisk in one cup of broth from stock pot. Whisk mixture into white chili stock pot.
Whisk Cream cheese mixture into stock pot broth. Simmer and serve.
HINT: Need a bowl of Keto White Chicken Chili? Hold off on adding 2 cans of drained, Great Northern bean until the end. After adding cream cheese mixture, then remove a Keto bowl of White Chicken Chili. Finally, add drained Great Northern Beans.
Substitutions
- Chicken – We like chicken breast, you may use thighs or rotisserie chicken.

Variations
- Chicken – You may use rotisserie chicken.
- Monterey Jack Cheese - This is a delicious variation, add 8oz shredded cheese and stir until melted.

Top tip
If temperatures reached too high after adding Cream cheese and sour cream the sauce can separate. Fix this by adding ½ teaspoon Xanthan Gum.
Broken Soup Fix: Whisk in ½ teaspoon Xanthan Gum and stir well before serving.

Ingredients
2 Tablespoons Olive Oil
1 cup Yellow Onion, chopped
1.5 lbs boneless, skinless, chicken breast, cut into 1 inch cubes
1 Tablespoon minced Garlic
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon mustard powder
¼ teaspoon cayenne Pepper
¼ teaspoon black pepper
4 cups chicken broth
2 (15.5oz) cans Great Northern beans, drained
1 can Rotel with Green Chilies with juice
8 ounces Cream Cheese
1 cup Sour Cream
Instructions
