Broccoli and Cheese Soup Ingredients
- Butter- Unsalted is preferred.
- Onion- Minced. White or sweet yellow onion.
- Xanthan Gum- Used to thicken the sauce. You may also use flour or 1:1 gluten-free mixture to thicken the broth.
- Chicken stock- Low sodium canned broth or make your own with by using 4-6 chicken bouillon cubes for 4 cups of water. (According to taste)
- Broccoli florets- Fresh broccoli is preferred. Chop florets off stalks.
- Carrot- Fresh carrots are preferred, however frozen can be used. Julianne or chopped.
- Paprika- Optional and used for coloring.
- Half-and-half- Milk or heavy cream can also be used.
- Cheddar cheese- Your favorite cheddar either sharp, medium or mild.

Instructions to Make Broccoli Cheese Soup
In a Dutch oven or medium soup pot melt butter and add onion over medium-high heat.
Whisk in flour or 1:1 gluten free substitute until smooth (However, if using Xanthan Gum, add at end). Next, whisk in chicken stock.
Add broccoli, carrots, and paprika. Bring to a boil then reduce heat to medium low and simmer for about 15 minutes or until broccoli is tender.
With a slotted spoon remove Broccoli and set aside. Add half-and-half and cheddar cheese, stir until melted. Add Xanthan Gum (if using instead of Flour or 1:1 substitute).
Return broccoli to the pan. Add salt and pepper if desired and serve.
Top tip
Broken Soup Fix: If temperatures reached too high after adding Half and Half/milk or cream, the sauce can separate. Fix this by adding ½ teaspoon Xanthan Gum.
