Ingredients
2 tablespoons Butter, unsalted
1/2 small Onion, minced
1 teaspoon Xanthan Gum (Keto) or 2 tablespoons Flour, All purpose or gluten-free 1:1
2 cups low sodium Chicken Stock
4 cups Broccoli florets or three large heads cut into small pieces
1 large Carrot, Julian or finely chopped
1/2 teaspoon Paprika (optional)
2 cups Half-and-Half, or Heavy Cream
2 1/2 cups Cheddar Cheese, shredded (Sharp or mild)
Instructions
In a Dutch oven or medium soup pot melt butter and add onion over medium-high heat.
Whisk in flour or 1:1 gluten free substitute until smooth (However, if using Xanthan Gum, add at end). Next, whisk in chicken stock.
Add broccoli, carrots, and paprika. Bring to a boil then reduce heat to medium low and simmer for about 15 minutes or until broccoli is tender.
With a slotted spoon remove Broccoli and set aside. Add half-and-half and cheddar cheese, stir until melted. Add Xanthan Gum (if using instead of Flour or 1:1 substitute).
Return broccoli to the pan. Add salt and pepper if desired and serve.
