Preheat grill to high heat.
Brush cut sides of buns with melted butter. In a large skillet, over medium heat, toast buttered sides of buns until golden brown. Place in microwave or oven to keep warm until ready to use.
Remove crust from bread. Cut bread into ¼ inch pieces or place in food processor and pulse until crumbs, then place in a large bowl. Add milk. With a fork, press bread into milk. Add in salt, Worcestershire, garlic, ketchup, BBQ sauce and stir. Next, add hamburger and mix with hands until well combined. Divide mixture into eight portions weighing 6.6-6.7 ounce portions. On a hard surface, form each ball into ¾ inch patties with straight sides and approximately 4 ½ - 5 inches across. Finish with a slight depression in the center of each patty.
Reduce the heat to medium. Grill hamburger patties, indent side up for 3-5 minutes, flip when juices accumulate in indention and have a good sear. Cook for a few more minutes until 140-145ºF or preferred doneness. Let sit inside oven with door closed for 5 minutes. (Oven turned off)
FDA recommends ground beef reaches 160ºF, however, burgers continue to cook after removed from the grill. Therefore, they can reach 160ºF on the plate.
Hint: Key to juicy burgers is to not cook over 155ºF. These burgers are juicy when cooked well done, but lose juice when overcooked.
