    Keto White Chili Recipe Ingredients

    • Olive Oil – Can use avocado oil or coconut oil.
    • Yellow onion, chopped
    • Chicken – We like chicken breast, you may use thighs or skip cooking and use a cooked and shredded rotisserie chicken. 
    • Garlic, minced
    • Chili powder 
    • Cumin
    • Oregano 
    • Mustard Powder 
    • Cayenne 
    • Black Pepper 
    • Chicken Broth - Use canned or make your own using 6 bouillon cubes and 4 cups water.
    • Rotel tomatoes – regular or with green chilies.
    • Cream Cheese – reduced fat or regular.
    • Greek Yogurt or Full Fat Sour Cream - We like Fage yogurt that tastes like sour cream.

    Instructions

    Chopping onion for white chicken chili recipe

    Dice onion.

    Cut chicken into chunks for white chicken chili recipe

    Cube chicken into 1 inch pieces.

    Sauté onion and chicken for white chicken chili recipe

    In medium stock pot over medium heat, sauté onion and chicken until chicken is no longer pink on the outside. (Chicken will continue to cook in broth)

    Add rotel to broth making white chicken chili

    Add garlic, chili powder, cumin, oregano, mustard powder, cayenne, black pepper, and chicken broth to stock pot.

    Cook for five minutes. Remove Chicken to plate and shred with two forks. Return chicken to stock pot. Add Rotel (with juice).

    Reduce heat to a simmer.

    Microwave cream cheese for one minute, stir in sour cream and one cup of broth from stock pot for white chicken chili recipe

    In a medium microwavable bowl, microwave cream cheese for one minute, whisk in Greek yogurt or sour cream, then whisk in one cup of broth from stock pot. Whisk mixture into white chili stock pot.

    Hint: Need to serve the rest of the family non-keto White Chicken Chili? Add 2 cans of drained, Great Northern bean after removing a bowl of Keto White Chicken Chili.

    Substitutions

    • Chicken – We like chicken breast, you may use thighs or rotisserie chicken. 
    • Oil – Can use avocado oil or coconut oil.
    • Onion, chopped – You can use white or red onion.

    Variations

    • Chicken – You may use rotisserie chicken. 
    • Monterey Jack Cheese - This is a delicious variation, add 8oz shredded cheese and stir until melted.

    Storage

    Refrigerate in sealed container for up to three days.

    Top tip

    If temperatures reached too high after adding Cream cheese and greek yogurt or sour cream the sauce can separate. Fix this by whisking in ½ teaspoon Xanthan Gum and stir well before serving.

    Ingredients

    Scale

    2 Tablespoons Olive Oil

    1 cup Yellow Onion, chopped

    1.5 lbs boneless, skinless, chicken breast, cut into 1 inch cubes

    1 Tablespoon minced Garlic

    2 teaspoons chili powder

    1 teaspoon cumin

    1 teaspoon oregano

    1 teaspoon mustard powder

    ¼ teaspoon cayenne Pepper

    ¼ teaspoon black pepper

    4 cups chicken broth

    1 can Rotel with Green Chilies with juice

    8 ounces Cream Cheese

    1 cup Greek yogurt (Fage) or full fat Sour Cream


    Instructions

    Dice onions. Cube chicken into 1 inch pieces. In a large stock pot, heat oil over medium heat. Sauté onion and chicken, until chicken is no longer pink on the outside. (Chicken will continue to cook in broth)

    Add garlic, chili powder, cumin, oregano, mustard powder, cayenne, black pepper, and chicken broth to stock pot.

    Increase heat to medium-high. Add seasonings and chicken broth. Cook for five minutes. Remove Chicken to plate and shred with two forks. Return chicken to stock pot. Add Rotel with juice. 

    Reduce heat to a simmer. 

    In a medium microwavable bowl, microwave cream cheese for one minute, whisk in greek yogurt or sour cream, then whisk in one cup of broth from stock pot. Whisk mixture into white chili stock pot.

    Whisk Cream cheese mixture into stock pot broth. Simmer and serve.

    Notes

    HINT: Need to serve the rest of the family non-keto White Chicken Chili? Add 2 cans of drained, Great Northern bean after removing a bowl of Keto White Chicken Chili.
