Authentic Pico de Gallo is made one day ahead of time and allowed to sit in the refrigerator overnight.
Ingredients
3 medium Tomatoes, on the vine, if available
1/4 cup Cilantro
1 Jalapeño pepper
1/4 cup Onion
1 clove minced garlic, about 1 teaspoon (optional)
2 Tablespoons fresh Lime juice, from one Lime
1/2 teaspoon Salt (optional)
1 cup chopped onion
Instructions
Dice tomatoes, chop cilantro, onion and jalapeño. Juice lime. Mince garlic, if using. Mix tomatoes, cilantro, onion, jalapeño, lime juice, garlic, and salt in a medium bowl. Let sit overnight for full flavor.

HINT: Let sit overnight for full flavor, but in a pinch, serve immediately.
