Ingredients to Make Quick Mashed Potatoes
- Instant Potatoes – I use Idahoan.
- Butter – creaminess.
- Sour Cream or Light Sour Cream – flavor.
- Chicken Broth – use canned, boxed or make your own chicken bouillon cubes and water. Use 1 cube per ½ cup water.
- Heavy Whipping Cream
- Milk – your choice based on health choices.
- Pepper – flavor enhancement. White pepper is great to use with potatoes.
- Parsley – decoration.

Instructions
In a large microwavable bowl add chicken broth, butter, sour cream, heavy cream, milk, and pepper.
Heat in microwave for 3 minutes then stir.
Heat another 2 minutes then stir in instant potatoes until mixed.
Let sit 2 minutes and stir again. Top with parsley and stir.
Top Tip
Make your own chicken broth using bouillon an d never buy broth again.
2 bouillon cubes per 1 cup of water.
NOTE: However, this recipe calls for more bouillon to match the total liquid in the recipe.
Substitutions
- Heavy Whipping Cream – you can use half and half or milk.
- Chicken Broth – use canned, boxed or make your own chicken bouillon cubes and water. Use 2 cubes per 1 cup water.
Variations
- Bacon – Add 1.4 cup cooked chopped bacon when mixing in remainder of ingredients.

½ cup chicken broth (Make: ½ cup water + 3 chicken bouillon cubes)
2 Tablespoons Butter, unsalted
½ cup Sour Cream
¼ cup Heavy Whipping Cream
1 ¼ cup Milk
½ teaspoon Pepper, white or black
(optional) 1 Tablespoon Parsley, fresh, chopped
